Ingredients
Scale
- 2 tablespoons coconut oil
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 can (400ml) full-fat coconut milk
- 1/2 cup vegetable broth (low-sodium)
- 2 cans (400g each) chickpeas, drained and rinsed
- 3 cups fresh spinach
- 1 tablespoon lime juice
- Salt and black pepper to taste
- Optional: 1 red bell pepper, diced
- Optional: 2 tablespoons coconut milk cream
- Optional: 1/2 cup fresh cilantro, chopped
Instructions
- Prep ingredients: Dice onion, mince garlic, grate ginger, and drain/rinse chickpeas.
- Heat coconut oil in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened.
- Add garlic and ginger; cook for 1 minute until fragrant but not browned.
- Add curry powder, cumin, and turmeric. Stir constantly for 1-2 minutes to bloom the spices.
- Pour in coconut milk and vegetable broth. Stir to combine and simmer for 3-4 minutes until the sauce thickens slightly.
- Add chickpeas to the sauce. Simmer for 5 minutes to allow flavors to meld. Optionally mash a few chickpeas for thickness.
- Stir in fresh spinach and cook for 1-2 minutes until wilted. Remove from heat.
- Stir in lime juice. Season with salt and pepper to taste.
- Serve immediately over basmati rice or with warm naan bread, topped with cilantro if desired.
Notes
Bloom spices in oil for better flavor. Use full-fat coconut milk for creaminess. Add acid (lime juice) at the end to preserve brightness. Can be frozen for up to 3 months.
