Description

A quick, 30-minute vegan curry made with chickpeas, coconut milk, and warm spices. It’s creamy, flavorful, and perfect for busy weeknights.


Ingredients

  • 2 tablespoons coconut oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 can (400ml) full-fat coconut milk
  • 1/2 cup vegetable broth (low-sodium)
  • 2 cans (400g each) chickpeas, drained and rinsed
  • 3 cups fresh spinach
  • 1 tablespoon lime juice
  • Salt and black pepper to taste
  • Optional: 1 red bell pepper, diced
  • Optional: 2 tablespoons coconut milk cream
  • Optional: 1/2 cup fresh cilantro, chopped

Instructions

  1. Prep ingredients: Dice onion, mince garlic, grate ginger, and drain/rinse chickpeas.
  2. Heat coconut oil in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened.
  3. Add garlic and ginger; cook for 1 minute until fragrant but not browned.
  4. Add curry powder, cumin, and turmeric. Stir constantly for 1-2 minutes to bloom the spices.
  5. Pour in coconut milk and vegetable broth. Stir to combine and simmer for 3-4 minutes until the sauce thickens slightly.
  6. Add chickpeas to the sauce. Simmer for 5 minutes to allow flavors to meld. Optionally mash a few chickpeas for thickness.
  7. Stir in fresh spinach and cook for 1-2 minutes until wilted. Remove from heat.
  8. Stir in lime juice. Season with salt and pepper to taste.
  9. Serve immediately over basmati rice or with warm naan bread, topped with cilantro if desired.

Notes

Bloom spices in oil for better flavor. Use full-fat coconut milk for creaminess. Add acid (lime juice) at the end to preserve brightness. Can be frozen for up to 3 months.
