Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and ginger until uniform.
  2. In a separate medium bowl or large measuring cup, whisk the eggs, milk, melted butter, vanilla extract, and pumpkin puree until smooth.
  3. Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold or stir until just combined, leaving a few lumps. Do not overmix.
  4. Preheat a non-stick skillet or griddle over medium heat. Test readiness by sprinkling water drops; they should bead up and dance.
