- 2 large eggs (room temperature)
- ½ cup (113g) unsalted butter, melted and cooled slightly
- 1 teaspoon pure vanilla extract
- 1 ½ cups (190g) all-purpose flour
- ½ cup (100g) granulated sugar (plus 2 tablespoons for topping)
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup (170g) semi-sweet chocolate chips
- Optional: ½ cup chopped walnuts or pecans
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- Melt the butter and let it cool slightly.
- Peel ripe bananas and mash them in a large bowl until smooth (about 1 ½ cups puree).
- Add melted butter, eggs, and vanilla extract to the mashed bananas. Whisk until well combined.
- In a separate bowl, whisk together flour, ½ cup sugar, baking soda, and salt.
- Pour dry ingredients into wet ingredients. Gently fold together with a spatula until just combined; do not overmix. The batter should remain lumpy.
- Fold in chocolate chips (and nuts, if using).
- Divide batter evenly among muffin cups, filling them almost to the top.
- Sprinkle the remaining 2 tablespoons of sugar over the tops of each muffin.
- Bake for 18-22 minutes, or until tops are golden brown and a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use very ripe, spotty bananas for the best flavor. Do not overmix the batter to ensure fluffy muffins. The sugar topping creates a crunchy, bakery-style crust. These can be frozen for up to 3 months.
