Description
A quick and easy triple berry crumble with a chewy oat streusel topping. This dessert uses fresh or frozen berries and is ready in about 30 minutes, making it the perfect lazy-but-impressive treat.

- 6 cups mixed berries (strawberries, blueberries, blackberries), chopped if fresh
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 cup old-fashioned rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 teaspoon ground cinnamon
- Pinch of salt
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×9 inch baking dish with butter or non-stick spray.
- In a large bowl, combine the berries, granulated sugar, lemon juice, cornstarch, and vanilla. Toss gently until berries are evenly coated.
- Pour the berry mixture into the prepared baking dish and spread evenly.
- In a separate medium bowl, whisk together the rolled oats, flour, brown sugar, cinnamon, and salt.
- Add the cold, cubed butter to the dry ingredients. Use your fingers or a fork to work the butter in until the mixture resembles coarse crumbs with some larger clumps.
- Spread the streusel topping evenly over the berry mixture.
- Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbling vigorously around the edges.
- Remove from oven and let cool for at least 20 minutes to allow the filling to set before serving.
Notes
Do not thaw frozen berries before using; they release more liquid which creates a better sauce. Ensure butter is cold and cubed for a flaky topping. Let the crumble cool completely before serving to prevent a soupy texture. Can be made gluten-free by using GF oats and flour blend.
