Description

  • 6 cups mixed berries (strawberries, blueberries, blackberries), chopped if fresh
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9 inch baking dish with butter or non-stick spray.
  2. In a large bowl, combine the berries, granulated sugar, lemon juice, cornstarch, and vanilla. Toss gently until berries are evenly coated.
  3. Pour the berry mixture into the prepared baking dish and spread evenly.
  4. In a separate medium bowl, whisk together the rolled oats, flour, brown sugar, cinnamon, and salt.
  5. Add the cold, cubed butter to the dry ingredients. Use your fingers or a fork to work the butter in until the mixture resembles coarse crumbs with some larger clumps.
  6. Spread the streusel topping evenly over the berry mixture.
  7. Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbling vigorously around the edges.
  8. Remove from oven and let cool for at least 20 minutes to allow the filling to set before serving.

Notes

Do not thaw frozen berries before using; they release more liquid which creates a better sauce. Ensure butter is cold and cubed for a flaky topping. Let the crumble cool completely before serving to prevent a soupy texture. Can be made gluten-free by using GF oats and flour blend.
