Instructions
- In a small bowl, mix softened cream cheese, powdered sugar, ½ teaspoon vanilla extract, and 2 tablespoons freeze-dried strawberry powder until smooth.
- Chill the filling mixture in the fridge for 15 minutes, then scoop into 12 small balls (about 1 tablespoon each).
- Place filling balls on a parchment-lined baking sheet and freeze for at least 30 minutes until solid.
- In a medium bowl, whisk together flour, baking soda, cornstarch, and salt.
- In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
- Add eggs one at a time, mixing well after each addition, then stir in 2 teaspoons vanilla extract.
- Gradually add dry ingredients to wet ingredients, mixing on low until just combined. Stir in ¼ cup freeze-dried strawberry powder.
- Chill the cookie dough in the fridge for 30 minutes.
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Remove frozen filling balls and chilled dough. Scoop 2 tablespoons of dough, flatten into a disc, place a filling ball in the center, and seal completely.
