  • ¼ cup (30g) powdered sugar
  • ½ teaspoon vanilla extract
  • 2 tablespoons (15g) freeze-dried strawberry powder
  • ¼ cup (50g) granulated sugar (for coating)
  • 2 tablespoons (15g) freeze-dried strawberry powder (for coating)

Instructions

  1. In a small bowl, mix softened cream cheese, powdered sugar, ½ teaspoon vanilla extract, and 2 tablespoons freeze-dried strawberry powder until smooth.
  2. Chill the filling mixture in the fridge for 15 minutes, then scoop into 12 small balls (about 1 tablespoon each).
  3. Place filling balls on a parchment-lined baking sheet and freeze for at least 30 minutes until solid.
  4. In a medium bowl, whisk together flour, baking soda, cornstarch, and salt.
  5. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  6. Add eggs one at a time, mixing well after each addition, then stir in 2 teaspoons vanilla extract.
  7. Gradually add dry ingredients to wet ingredients, mixing on low until just combined. Stir in ¼ cup freeze-dried strawberry powder.
  8. Chill the cookie dough in the fridge for 30 minutes.
  9. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
