  • 1/4 cup soy sauce (or low-sodium)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water
  • 2 stalks green onions, sliced (for garnish)
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Pat chicken thighs dry with paper towels and season generously with salt and black pepper.
  2. In a small bowl, whisk together honey, sriracha, soy sauce, rice vinegar, and sesame oil. Set aside.
  3. Heat a large skillet over medium-high heat and add oil. Sear chicken thighs in a single layer for 4-5 minutes per side until golden brown and cooked through (165°F). Remove chicken and set aside.
  4. Reduce heat to medium. Add minced garlic and grated ginger to the skillet and sauté for 30 seconds until fragrant.
  5. Pour in the sauce mixture and simmer for 2-3 minutes, stirring constantly.
  6. Stir the cornstarch slurry and drizzle it into the simmering sauce while stirring. Cook for 30 seconds until the sauce is glossy and sticky.
  7. Return chicken to the skillet, tossing to coat evenly in the sauce. Let sit for 1 minute.
  8. Serve immediately, garnished with green onions and sesame seeds.

Notes

Patting the chicken dry is crucial for a good sear. Do not overcrowd the pan to avoid steaming the meat. Fresh ginger provides better flavor than ground ginger. The sauce can be made ahead and stored in the fridge for up to 2 days. This recipe does not freeze well as the sauce may separate.
