Description
A quick and delicious 10-minute breakfast featuring crispy sourdough toast topped with creamy mashed avocado and a perfectly poached egg.

- 2 thick slices sourdough bread (about 100g each)
- 1 large ripe avocado (about 150g flesh)
- 1 teaspoon lemon juice or white wine vinegar
- ½ teaspoon flaky sea salt or kosher salt
- Freshly cracked black pepper, to taste
- 2 large fresh eggs
- 1 tablespoon white or apple cider vinegar (for poaching water)
- 4 cups water (1 liter)
- Optional: ½ teaspoon red pepper flakes
- Optional: 2 tablespoons crumbled feta cheese
- Optional: Small handful of microgreens or arugula
- Optional: 1 teaspoon everything bagel seasoning
Instructions
- Toast the sourdough slices in a skillet with olive oil or a toaster until golden and crisp. Set aside on a plate.
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, a pinch of salt, and pepper. Mash with a fork until creamy but still textured.
- Fill a small saucepan with 4 cups of water and bring to a boil. Reduce heat to low to maintain a gentle simmer and stir in the vinegar.
- Crack each egg into a small separate bowl. Create a gentle whirlpool in the water and drop the eggs into the center.
- Poach the eggs for 3-4 minutes for a runny yolk or 5 minutes for a firmer yolk. Do not touch them while cooking.
- Remove eggs with a slotted spoon and drain on a paper towel to remove excess water.
- Spread the mashed avocado generously over the warm toast.
- Top with the poached egg and sprinkle with flaky sea salt, red pepper flakes, and any other desired toppings.
- Serve immediately while the bread is crisp and the egg is runny.
Notes
Use fresh eggs for better poaching results. If using fresh bread, toast it lightly first to prevent sogginess. Do not freeze this recipe as the bread will turn to mush and eggs will become rubbery. For a gluten-free version, use gluten-free sourdough-style bread. For a vegan version, replace the egg with a tofu scramble.
