Instructions

  1. Cream the softened butter and 1 cup granulated sugar in a large bowl until light and fluffy (3-4 minutes).
  2. Add the egg and vanilla extract, beating until combined. Scrape down the sides of the bowl.
  3. Whisk together flour, baking powder, and salt in a separate bowl.
  4. Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
  5. Stir in lemon juice and lemon zest by hand.
