Instructions
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, cream of tartar, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar on medium-high speed for 3-4 minutes until pale and fluffy.
- Add the eggs one at a time, beating well after each addition, then add the vanilla extract. Scrape down the sides of the bowl.
- Reduce mixer speed to low and gradually add the flour mixture. Mix until just combined; do not overmix.
- In a small bowl, mix the ½ cup granulated sugar with the cinnamon for the coating.
- Portion the dough into 2-tablespoon balls and roll each in the cinnamon sugar mixture until fully coated.
- Place dough balls on prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are set and lightly golden, but centers still look soft.
- Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.
Notes
Ensure butter is softened but not melted. Use room temperature eggs for better emulsification. Do not overbake; cookies continue to cook on the hot pan. For extra chewiness, chill dough for 30 minutes before baking. Store in an airtight container with a slice of bread to maintain softness.
