Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, cream of tartar, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar on medium-high speed for 3-4 minutes until pale and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then add the vanilla extract. Scrape down the sides of the bowl.
  5. Reduce mixer speed to low and gradually add the flour mixture. Mix until just combined; do not overmix.
  6. In a small bowl, mix the ½ cup granulated sugar with the cinnamon for the coating.
  7. Portion the dough into 2-tablespoon balls and roll each in the cinnamon sugar mixture until fully coated.
  8. Place dough balls on prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes until edges are set and lightly golden, but centers still look soft.
  10. Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.

Notes

Ensure butter is softened but not melted. Use room temperature eggs for better emulsification. Do not overbake; cookies continue to cook on the hot pan. For extra chewiness, chill dough for 30 minutes before baking. Store in an airtight container with a slice of bread to maintain softness.
