  • 34 pounds beef chuck roast
  • 1 large yellow onion, sliced into thick wedges
  • 4 cloves garlic, smashed
  • 2 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 2 French baguettes, sliced in half lengthwise
  • 810 slices Provolone or Swiss cheese
  • 2 tablespoons butter, melted

Instructions

  1. Pat the chuck roast dry and season generously with salt and pepper on all sides.
  2. Slice the onion into thick wedges and smash the garlic cloves.
  3. Place the sliced onions and smashed garlic at the bottom of a 6-quart slow cooker to create a rack.
  4. Place the seasoned chuck roast on top of the vegetables.
  5. Pour beef broth over the roast until it comes halfway up the sides.
  6. Add Worcestershire sauce, garlic powder, dried thyme, and bay leaf. Stir gently to combine.
  7. Cover and cook on LOW for 8-10 hours (or HIGH for 4-5 hours) until the beef is fork-tender.
  8. Remove the beef from the slow cooker and discard the bay leaf.
  9. Shred the beef into bite-sized pieces using two forks.
  10. Pour the cooking liquid into a saucepan and skim off excess fat.
  11. Simmer the liquid on medium heat for 5-10 minutes until it thickens slightly to create the au jus. Taste and adjust salt if needed.
  12. Preheat the broiler. Brush the cut sides of the baguettes with melted butter.
  13. Place baguettes butter-side up on a baking sheet and broil for 1-2 minutes until golden and crisp.
  14. Place shredded beef on the bottom half of each bun and top with cheese.
  15. Return to the broiler for 1 minute until the cheese is melted.
  16. Serve immediately with warm au jus for dipping.

Notes

For best results, cook on LOW for maximum tenderness. If you have time, sear the roast in a skillet before slow cooking for added depth. Skim fat from the au jus for a cleaner flavor. Toast the bread well to prevent it from getting soggy. Leftovers freeze well for up to 3 months.
