- 2 tablespoons cold milk (for foam)
- 1 teaspoon maple syrup (for foam)
- Extra cinnamon for garnish
Instructions
- Make the Pumpkin Spice Mix: In a small bowl, combine cinnamon, ginger, nutmeg, cloves, and allspice. Stir in maple syrup until a thick, fragrant paste forms. Store in an airtight jar in the fridge.
- Prep the Pumpkin Base: In a small saucepan or microwave-safe mug, combine 1/2 cup pumpkin puree with 2 tablespoons of the pumpkin spice mix. Stir well.
- Heat the Milk: Add 1 cup of milk to the pumpkin mixture. Heat on the stove over medium-low heat, stirring constantly, or microwave in 30-second intervals until hot but not boiling.
- Add the Coffee: Stir in espresso or strong coffee (or skip for decaf/kids). Add vanilla extract. Taste and adjust spice or sweetness if needed.
- Make the Maple Foam: In a separate bowl, combine 2 tablespoons of cold milk with 1 teaspoon of maple syrup. Use a hand mixer to whip until thick and foamy.
- Assemble and Serve: Pour the hot latte into mugs. Top with the maple foam and sprinkle with extra cinnamon.
Notes
Use Grade B maple syrup for deeper flavor. Ensure milk is cold when whipping foam for best results. This recipe is naturally gluten-free. For a vegan version, use oat or almond milk. The pumpkin spice mix can be stored for up to 2 weeks.
