Instructions

  1. Make the Pumpkin Spice Mix: In a small bowl, combine cinnamon, ginger, nutmeg, cloves, and allspice. Stir in maple syrup until a thick, fragrant paste forms. Store in an airtight jar in the fridge.
  2. Prep the Pumpkin Base: In a small saucepan or microwave-safe mug, combine 1/2 cup pumpkin puree with 2 tablespoons of the pumpkin spice mix. Stir well.
  3. Heat the Milk: Add 1 cup of milk to the pumpkin mixture. Heat on the stove over medium-low heat, stirring constantly, or microwave in 30-second intervals until hot but not boiling.
  4. Add the Coffee: Stir in espresso or strong coffee (or skip for decaf/kids). Add vanilla extract. Taste and adjust spice or sweetness if needed.
