  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, combine softened butter, brown sugar, and granulated sugar. Mix with a fork or wooden spoon until well combined and crumbly.
  3. Add the egg and vanilla extract to the butter mixture and mix until smooth and creamy.
  4. Add the flour, baking soda, salt, and cinnamon to the wet ingredients. Stir until just combined to form a dough.
  5. Fold in the rolled oats and raisins gently with a spoon.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until edges are lightly golden but centers still look slightly soft.
  8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack or plate.
