  • 23 tablespoons warm water
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ medium red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup Kalamata olives, halved
  • ¼ cup fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 400°F (200°C). Line a 10×15 inch sheet pan with parchment paper.
  2. Drain and rinse the chickpeas. Pat them thoroughly dry with a kitchen towel or paper towels to ensure crispiness.
  3. In a large bowl, toss the dried chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  4. Spread chickpeas in a single layer on the prepared sheet pan. Roast for 15 minutes, shaking the pan halfway through, until golden and crispy.
  5. While chickpeas roast, make the dressing: In a small jar with a lid, combine tahini, lemon juice, maple syrup, minced garlic, and a pinch of salt. Shake vigorously.
  6. Add warm water one tablespoon at a time, shaking between additions, until the dressing is creamy and pourable. Adjust seasoning to taste.
  7. Chop cucumber, tomatoes, and red onion. If using red onion, soak slices in cold water for 5 minutes to mellow the flavor, then drain.
  8. Remove chickpeas from the oven and let cool for a minute.
  9. In a large serving bowl, combine cucumber, tomatoes, red onion, and olives. Top with warm chickpeas and crumbled feta.
  10. Drizzle generously with tahini lemon dressing, sprinkle with fresh parsley, and serve with lemon wedges.

Notes

The most important step is drying the chickpeas thoroughly before roasting to ensure they get crispy instead of steaming. Do not overcrowd the pan; roast in batches if necessary. Store components separately in the refrigerator to maintain texture; the bowl is best served at room temperature or cold.
