Loaded Cheeseburger Soup: Best Weeknight Dinner

  • Author: Sarah
  • Total Time: 30 minutes
  • Yield: 6 servings 1x

Description

A creamy, one-pot weeknight dinner that tastes like a cheeseburger. Ready in under 30 minutes, this soup combines savory beef, sharp cheddar, and tangy pickles for a comforting meal.

Ingredients

Scale
  • 1.5 lbs ground beef (80/20 fat ratio)
  • 2 tablespoons butter
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 4 cups beef broth (low-sodium)
  • 1 cup heavy cream
  • 1 tablespoon yellow mustard
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup dill pickles, chopped
  • Salt and black pepper to taste

Instructions

  1. Prep ingredients: Dice onions, mince garlic, chop pickles, and shred cheese.
  2. Brown the beef in a large Dutch oven or heavy-bottomed pot over medium-high heat until no longer pink (5-7 minutes). Drain excess fat if desired.
  3. Add butter to the pot. Once melted, add diced onion and cook for 2-3 minutes until softened.
  4. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn.
  5. Sprinkle flour over the beef and onion mixture. Stir constantly for 1-2 minutes to create a roux.
  6. Gradually pour in beef broth while stirring constantly to prevent lumps. Add heavy cream and mustard.
  7. Simmer for 3-4 minutes until the soup thickens slightly and coats the back of a spoon.
  8. Remove the pot from heat. Gradually add shredded cheddar cheese, stirring constantly until melted and smooth.
  9. Stir in chopped dill pickles. Season with salt and pepper to taste.
  10. Ladle into bowls and serve immediately with toppings.

Notes

Use 80/20 ground beef for best flavor. Shred your own cheese to avoid anti-caking agents that cause graininess. Always remove from heat before adding cheese to prevent separation. For a lighter version, use half-and-half and reduce cheese. For a potato-lover’s version, add diced potatoes with the broth.
