These keto cheesecake fat bombs are a delicious, sugar-free snack that tastes like real cheesecake. Made with simple ingredients like cream cheese, butter, and erythritol, they are perfect for satisfying sweet cravings while staying in ketosis.


Ingredients

  • 8 oz (225g) full-fat brick-style cream cheese, softened
  • 1/2 cup (1 stick / 113g) unsalted butter, softened
  • 23 tablespoons (30-45ml) heavy whipping cream
  • 1 teaspoon pure vanilla extract
  • 1/4 to 1/3 cup (30-40g) granular erythritol or monk fruit sweetener
  • Pinch of salt
  • Optional topping: crushed vanilla keto cookies, almond flour, or crushed pecans

Instructions

  1. Soften the cream cheese and butter at room temperature for at least 30 minutes.
  2. Combine the softened cream cheese, butter, heavy cream, vanilla extract, sweetener, and salt in a food processor.
  3. Pulse to break up ingredients, then blend on high for 1-2 minutes until the mixture is completely smooth, creamy, and pale yellow. Scrape down sides as needed.
  4. If using metal molds, lightly spray with cooking spray. If adding a base crumble, sprinkle it into the bottom of the molds.
  5. Scoop or pipe the cheesecake mixture into the molds, filling them almost to the top.
  6. Optionally, sprinkle additional crumble topping or a dollop of sugar-free whipped cream on top.
  7. Place the tray in the freezer for at least 2 hours, or until completely solid.
  8. Pop the fat bombs out of the molds and store in an airtight container in the freezer.
  9. Let sit at room temperature for 2-3 minutes before eating to soften slightly.

Notes

Ensure ingredients are fully softened to avoid lumps. Silicone molds are recommended for easy removal. These can be stored in the freezer for up to 3 months. For a lemon twist, swap vanilla for lemon extract and add lemon juice.
