Description
A quick and easy 20-minute side dish featuring glazed, tender carrots roasted with honey, fresh thyme, and a finish of butter for a sweet and savory crowd-pleaser.
Ingredients
Scale
- 2 pounds carrots, peeled and cut into uniform batons
- 3 tablespoons honey
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh thyme leaves
- 2 tablespoons unsalted butter
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- Optional: chopped parsley or chives for garnish
Instructions
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Place the cut carrots in a large mixing bowl.
- Drizzle with olive oil and honey, then sprinkle with salt and pepper. Toss thoroughly to coat evenly.
- Add the fresh thyme leaves and toss again to distribute.
- Spread carrots in a single layer on the baking sheet, ensuring they are not crowded.
- Roast for 15-18 minutes, flipping halfway through, until tender and caramelized.
- Remove from oven and immediately drizzle with melted butter, tossing to coat.
- Garnish with reserved thyme sprigs or parsley and serve immediately.
Notes
Ensure carrots are cut uniformly for even cooking. Do not crowd the pan to allow for caramelization rather than steaming. Add butter at the end to prevent burning. Honey burns easily, so check carrots around the 12-minute mark if your oven runs hot.
