Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter.
- In a medium bowl, whisk together flour, baking powder, and salt until no lumps remain.
- In a larger bowl, whisk melted butter, 1 cup brown sugar, egg, and 1 teaspoon vanilla until smooth.
- Gently fold the dry ingredients into the wet ingredients until just combined; do not overmix.
- Pour batter into the prepared pan and spread evenly.
- Mix the extra 1/2 cup brown sugar and cinnamon in a small bowl. Sprinkle evenly over the batter.
- Use a knife or fork to gently swirl the cinnamon mixture into the batter to create marbled ribbons.
- Bake for 25-30 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
- While baking, make the drizzle by combining softened cream cheese, powdered sugar, 1 teaspoon vanilla, and milk in a microwave-safe bowl. Microwave in 15-second intervals, stirring until smooth.
- Let the cake cool in the pan for at least 15 minutes.
- Drizzle the cream cheese mixture over the cooled cake in a zigzag pattern.
- Cut into squares and serve warm.
Notes
Do not overmix the batter to avoid a dense texture. Ensure cream cheese is full-fat brick style for the drizzle to thicken properly. Let the cake cool for 15 minutes before drizzling to prevent the glaze from melting into the cake. For extra gooeyness, add chocolate chips to the swirl.
