- 1 cup (240ml) liquid egg whites
- 4–6 strips turkey bacon
- 2 cups fresh spinach
- 1/2 medium yellow onion, diced
- 2 cloves garlic, minced
- 1/4 cup crumbled feta cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon olive oil
- Salt and black pepper to taste
Instructions
- Prep ingredients: Dice onion, mince garlic, and whisk egg whites in a small bowl until frothy. Set aside.
- Heat a 10-inch non-stick skillet over medium heat. Add turkey bacon and cook until browned and crispy (3-4 minutes).
- Remove bacon and set on a paper towel to drain, leaving about 1 teaspoon of fat in the pan.
- Add diced onion to the pan and sauté for 2-3 minutes until softened. Add garlic and cook for 30 seconds.
- Add spinach (and mushrooms if using) and cook for 1-2 minutes until wilted. Add cherry tomatoes if using and cook for 1 minute.
- Pour whisked egg whites over the vegetables. Sprinkle with Italian seasoning and red pepper flakes.
- Let eggs sit for 30 seconds, then gently stir with a spatula to create soft curds. Do not over-stir.
- When eggs are mostly set but slightly runny on top, remove pan from heat.
- Crumble turkey bacon back into the pan and sprinkle feta cheese on top. Let sit for 30 seconds to soften cheese.
- Divide into bowls and serve immediately with optional toppings like avocado or hot sauce.
Notes
Do not overcook the eggs; remove from heat when slightly wet as they will continue to cook from residual heat. Whisking egg whites well adds air for a fluffier texture. If using frozen spinach, thaw and squeeze out all excess water. This recipe is naturally gluten-free but check turkey bacon labels. For dairy-free, skip feta or use a dairy-free alternative.
