- 1 tablespoon rice vinegar
- 1–2 tablespoons sriracha or chili garlic sauce
- 1 teaspoon toasted sesame oil
- ¼ cup chicken or vegetable broth
- White sesame seeds, for garnish
- Fresh cilantro, chopped, for garnish
- Lime wedges, for serving
Instructions
- Prep vegetables: Slice green onions, mince garlic, and grate ginger. Measure sauce ingredients into a small bowl.
- Brown the meat: Heat a large skillet over medium-high heat. Add ground turkey (or chicken/pork) and break it up with a spoon. Cook for 5-7 minutes until browned and no longer pink. Drain excess liquid if necessary.
- Add aromatics: Push meat to one side. Add garlic and ginger to the empty space and sizzle for 30 seconds until fragrant. Stir into the meat.
- Add cabbage and sauce: Add coleslaw mix to the pan. Pour in soy sauce, rice vinegar, sriracha, sesame oil, and broth. Stir to combine.
- Cook vegetables: Let the mixture cook for 3-4 minutes, stirring occasionally, until the cabbage is tender-crisp.
- Taste and adjust: Turn off heat. Taste and adjust seasoning with more soy sauce, vinegar, or sriracha as needed.
- Serve: Serve immediately in bowls, topped with green onions, sesame seeds, cilantro, and a squeeze of lime.
Notes
Do not overcook the cabbage; it should remain tender-crisp. Use toasted sesame oil for authentic flavor. If using ground beef, ensure it is lean (85%) and drain excess fat. This dish is best served fresh but stores well in the fridge for up to 4 days. Do not freeze as the cabbage will become mushy.
