Description
A quick, stress-free weeknight meal featuring salmon and asparagus roasted on a single sheet pan with a lemon-garlic glaze. Ready in just 20 minutes with minimal cleanup.
Ingredients
Scale
- 1.5 lbs salmon fillets (center-cut, about 1-inch thick)
- 1 bunch asparagus (12–16 spears, woody ends snapped off)
- 3 tablespoons extra virgin olive oil
- 1 large lemon (zest and juice)
- 3–4 cloves garlic (minced)
- 1 teaspoon dried oregano
- Salt and black pepper (to taste)
- 1 tablespoon honey or maple syrup
- 1 tablespoon butter (melted, optional)
- ½ teaspoon red pepper flakes (optional)
- Lemon wedges (for serving)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Wash and dry the asparagus, snapping off woody ends. Arrange asparagus on one side of the baking sheet.
- Pat salmon fillets dry with paper towels and place on the other side of the pan, ensuring they are not touching.
- In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, honey, oregano, salt, pepper, and red pepper flakes. Add melted butter if using.
- Drizzle half of the sauce over the asparagus and toss to coat. Sprinkle with a pinch of salt.
- Brush the remaining sauce generously over the salmon fillets.
- Roast in the preheated oven for 12-15 minutes, or until salmon flakes easily with a fork and is opaque throughout, and asparagus is tender-crisp.
- Serve immediately with rice, quinoa, or roasted potatoes, garnished with fresh lemon wedges.
Notes
Do not crowd the pan to ensure roasting rather than steaming. Pat salmon dry before cooking for better texture. If using frozen salmon, thaw completely and pat very dry. White fish or shrimp can be substituted, adjusting cook time accordingly. For dairy-free, omit the butter.
