  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ cup low-sodium chicken broth
  • ½ cup tomato sauce or crushed tomatoes

Instructions

  1. Dice the sweet potatoes, onion, and bell pepper. Mince the garlic and measure out the spices.
  2. Heat the oil in a 12-inch skillet over medium-high heat. Add the ground turkey and break it into small crumbles with a wooden spoon.
  3. Cook the turkey for 4-5 minutes until browned and no longer pink. If there is excess liquid or fat, drain it off.
  4. Add the diced onions and bell peppers to the skillet. Cook for 2-3 minutes until onions are translucent.
  5. Add the minced garlic and cook for 30 seconds more, being careful not to burn it.
  6. Add the diced sweet potatoes, smoked paprika, cumin, chili powder, salt, and pepper. Stir to coat the potatoes in spices and cook for 1 minute to toast the spices.
  7. Pour in the chicken broth and tomato sauce. Stir to combine and bring to a boil.
  8. Reduce heat to medium-low, cover the skillet with a lid, and simmer for 8-10 minutes until potatoes are fork-tender. Stir halfway through to prevent sticking.
  9. Remove the lid, taste, and adjust seasoning if needed. If desired, uncover and cook for 2 more minutes to crisp up.
  10. Serve hot, topped with fresh cilantro, Greek yogurt, avocado, and a squeeze of lime.

Notes

Cut potatoes evenly to ensure they cook at the same rate. Do not crowd the pan to allow the turkey to brown properly. Smoked paprika is recommended for depth of flavor.
