  • 1 pound (450g) ground beef (80/20 lean)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 8 ounces (225g) cremini mushrooms, sliced
  • 1 cup (240ml) beef broth (low-sodium)
  • 1 teaspoon Worcestershire sauce
  • ½ cup (120g) full-fat sour cream (room temperature)
  • 1 cup (100g) shredded sharp cheddar cheese
  • 8 ounces (225g) egg noodles, cooked
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep ingredients: Chop onion, mince garlic, slice mushrooms, and grate cheese. Set aside.
  2. Heat a large skillet over medium-high heat. Add ground beef, breaking it up with a wooden spoon. Season with salt and pepper. Cook until browned and no longer pink (5-7 minutes). Drain excess fat if desired, then transfer beef to a plate.
  3. In the same skillet, melt butter over medium heat. Add diced onion and cook for 2-3 minutes until softened. Add minced garlic and cook for 1 minute until fragrant but not browned.
  4. Add sliced mushrooms to the skillet. Cook for 4-5 minutes, stirring occasionally, until they release their water and start to brown.
  5. Pour in beef broth and Worcestershire sauce. Scrape up browned bits from the bottom of the pan. Simmer for 2 minutes to reduce slightly. Remove pan from heat.
  6. Stir in sour cream until smooth. Add the cooked beef back into the skillet. Stir in shredded cheddar cheese until melted and creamy. Taste and adjust seasoning.
  7. Cook egg noodles according to package directions. Drain well.
  8. Toss the cooked noodles with the creamy beef and mushroom sauce. Serve immediately, topped with fresh parsley if desired.

Notes

Use room temperature sour cream to prevent curdling. Shred your own cheese for a smoother sauce. If the sauce is too thick, add a splash of starchy pasta water. This dish does not freeze well due to the dairy content.
