  • 68 cloves Garlic, minced
  • 1/2 teaspoon Red Pepper Flakes
  • 1/4 cup (60ml) Dry White Wine (e.g., Sauvignon Blanc)
  • 1/2 cup (120ml) Low-Sodium Chicken Broth
  • 1 teaspoon Dijon Mustard
  • 2 tablespoons Fresh Parsley, chopped
  • Kosher Salt and Black Pepper, to taste

Instructions

  1. Pat the beef cubes completely dry with paper towels and season generously with salt and pepper.
  2. Heat neutral oil in a large skillet over medium-high heat. Add beef in a single layer (cook in batches if necessary) and sear for 2 minutes undisturbed, then flip and cook 1-2 minutes until browned. Remove beef to a plate.
  3. Reduce heat to medium. Add butter to the pan. Once melted, add minced garlic and red pepper flakes. Stir constantly for 30-60 seconds until fragrant.
  4. Pour in white wine and scrape up brown bits from the bottom of the pan.
  5. Stir in chicken broth and Dijon mustard. Simmer for 1-2 minutes until the sauce reduces slightly and becomes glossy.
  6. Return beef and any accumulated juices to the pan. Toss to coat and warm through for about 1 minute.
  7. Turn off heat and stir in fresh parsley. Taste and adjust salt if needed.

Notes

Ensure beef is dry before searing to achieve a good crust. Do not overcrowd the pan; cook in batches if necessary. Garlic burns easily, so keep heat at medium when adding it. If the sauce is too thin, simmer longer or add a cornstarch slurry. If too salty, add a splash of broth or lemon juice. Leftovers can be reheated gently in a skillet with a splash of broth.
