Description

These baked jalapeno popper egg rolls are the ultimate game day appetizer. Crispy, spicy, and creamy, they are easy to make ahead, transport-friendly, and vegetarian-friendly.


Ingredients

  • 8 oz (225g) full-fat block cream cheese, softened
  • 1 cup (100g) sharp cheddar cheese, shredded
  • 1/2 cup (60g) cooked bacon, crumbled
  • 46 medium fresh jalapeno peppers, finely chopped
  • 34 stalks green onions, finely chopped
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 package (12-16 count) refrigerated square egg roll wrappers
  • 1 egg + 1 tablespoon water (for egg wash)
  • Vegetable oil (for brushing/spraying)

Instructions

  1. Preheat oven to 400°F (200°C). Line two large baking sheets with parchment paper.
  2. In a mixing bowl, combine softened cream cheese, shredded cheddar, crumbled bacon, minced garlic, and chopped green onions. Mix until smooth. Taste and adjust salt and pepper.
  3. Wear gloves and slice jalapenos in half lengthwise. Scrape out seeds and membranes (leave some for extra spice). Finely chop the jalapeno halves and stir into the cream cheese mixture.
  4. Place an egg roll wrapper in a diamond shape. Place 1-2 tablespoons of filling in the center, leaving a 1-inch border.
  5. Fold the bottom corner up over the filling, tuck it in tight, then fold in the left and right corners. Roll tightly toward the top corner.
  6. Brush the top corner with egg wash and finish rolling, pressing firmly to seal. Place seam-side down on the baking sheet.
  7. Repeat with remaining wrappers. Lightly spray or brush the tops of the egg rolls with vegetable oil.
  8. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  9. Let cool for 5 minutes before serving. Serve warm with ranch, blue cheese, or chipotle aioli.

Notes

For best results, use block cream cheese rather than spread. If using jarred jalapenos, pat them very dry to prevent soggy wrappers. You can freeze the rolled, uncooked egg rolls on a baking sheet before baking; add 5-10 minutes to cook time if baking from frozen. Keep wrappers covered with a damp towel while working to prevent drying out.
