Fluffy Cinnamon Roll Baked Oatmeal: Easy Weekend Breakfast

  • Author: Sarah
  • Total Time: 50 minutes
  • Yield: 9 servings 1x

Description

A cozy, fluffy baked oatmeal that tastes like a cinnamon roll without the effort of making dough. It features a chewy oat base, a caramelized brown sugar cinnamon swirl, and an optional tangy cream cheese drizzle.

Ingredients

Scale
  • 3 cups old-fashioned rolled oats
  • 2 cups whole milk
  • 2 large eggs
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup unsalted butter, melted
  • ½ cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • 2 ounces cream cheese, softened (for drizzle)
  • 2 tablespoons powdered sugar (for drizzle)
  • 12 teaspoons milk (for drizzle)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large mixing bowl, combine the rolled oats, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, eggs, and vanilla extract until combined.
  4. Pour the wet mixture over the dry ingredients and stir until the oats are fully coated.
  5. In a small bowl, mix the melted butter, brown sugar, and cinnamon.
  6. Sprinkle half of the cinnamon-sugar mixture over the oat batter and gently swirl it in with a knife.
  7. Spread the remaining cinnamon-sugar mixture over the top of the batter.
  8. Bake for 35-40 minutes until the top is golden brown and the center is set.
  9. Let cool for 10-15 minutes to allow it to set.
  10. While cooling, whisk cream cheese, powdered sugar, and milk until smooth.
  11. Slice into squares and drizzle with the cream cheese mixture before serving.

Notes

Do not use instant or steel-cut oats; old-fashioned rolled oats are required for the correct texture. Ensure baking powder is fresh for maximum fluffiness. Let the oatmeal cool completely before cutting to prevent it from falling apart. The cream cheese drizzle is optional but recommended for authentic cinnamon roll flavor.
