Description

A lazy, life-saving slow cooker recipe for creamy chicken and dumplings using store-bought biscuits. Perfect for busy weeknights with minimal active prep time and one-pot cleanup.


Ingredients

  • 2 large boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 32 oz chicken broth (low-sodium recommended)
  • 2 tablespoons butter
  • 2 large carrots, chopped into 1-inch chunks
  • 3 stalks celery, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 2 cans (16 oz each) refrigerated biscuit dough
  • 1/2 cup all-purpose flour (for dusting biscuits)
  • 1 cup frozen peas
  • 1/2 cup heavy cream or half-and-half (optional)

Instructions

  1. Chop carrots and celery into 1-inch chunks and place them at the bottom of a 6-quart slow cooker to protect the chicken from direct heat.
  2. Place chicken breasts on top of the vegetables. Season generously with salt, pepper, and dried thyme.
  3. Pour in chicken broth and add butter. Stir gently to combine.
  4. Cover and cook on LOW for 6-7 hours (or HIGH for 3-4 hours) until chicken is tender.
  5. Remove chicken from the pot and shred it using two forks. Chop into bite-sized pieces.
  6. Cut canned biscuits into halves or quarters. Roll pieces lightly in flour to coat.
  7. Return shredded chicken to the slow cooker. Lay flour-dusted biscuit pieces on top without stirring.
  8. Cover and cook on HIGH for 30 minutes until dumplings are firm and cooked through.
  9. Stir in frozen peas and heavy cream. Taste and adjust seasoning if needed.
  10. Serve immediately in large bowls.

Notes

Do not open the lid frequently during cooking to retain heat. Ensure dumplings are cooked on HIGH for the final 30 minutes to ensure they are firm. Add peas at the very end to keep them bright green. For a lighter version, use less cream or milk. Can be frozen for up to 3 months.
