Description

A quick, one-pan weeknight dinner featuring seared chicken breasts in a sticky, sweet-savory apple cider and maple syrup glaze with fresh thyme and apples.


Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup apple cider
  • 2 tablespoons real maple syrup
  • 2 medium apples (Honeycrisp or Fuji), chopped
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1 tablespoon butter
  • Optional: 1/2 medium onion, diced
  • Optional: 1/2 cup mushrooms, sliced
  • Optional: 2 cups spinach

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides generously with salt, pepper, Italian seasoning, garlic powder, and smoked paprika. Pound to even thickness if needed.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown, then remove to a plate.
  3. Reduce heat to medium. Add chopped apples (and onion if using) to the pan. Cook for 3-4 minutes until softened. Add minced garlic and thyme, cooking for 1 more minute.
  4. Pour in apple cider and maple syrup. Scrape up brown bits from the bottom of the pan. Simmer for 3-4 minutes until the glaze thickens slightly.
  5. Return chicken to the pan, nestling it into the apple mixture. Spoon glaze over the top. Cover and simmer on medium-low for 5-7 minutes until chicken reaches 165°F internal temperature, flipping halfway through.
  6. Remove from heat, stir in butter until melted. Let rest for 2 minutes before serving.

Notes

Pat chicken dry for a better sear. Do not crowd the pan. Use real apple cider, not juice. Rest chicken for 2 minutes to retain juices. Glaze can be thickened with cornstarch slurry if needed. Leftovers keep in fridge for 4 days.
