Instructions

  1. Prep: Chop chicken, onion, bell pepper, and apples. Season chicken with salt and pepper.
  2. Brown Sausage: Heat a 12-inch skillet over medium-high heat. Add sausage and cook for 5 minutes until browned and crispy. Drain excess grease, leaving about 1 tablespoon.
  3. Cook Chicken: Add chicken pieces to the pan. Sear for 1 minute, then cook until golden brown and done (5-7 minutes). Remove chicken and sausage to a plate.
  4. Sauté Veggies: Lower heat to medium. Add onion and bell pepper to the pan; cook for 3 minutes until softened. Add diced apples and cook for 2 minutes until they begin to soften.
  5. Build Sauce: Stir in Dijon mustard and soy sauce. Pour in chicken broth, scraping up brown bits from the bottom. Simmer for 1-2 minutes until slightly reduced.
  6. Combine: Return chicken and sausage to the pan. Add spinach and toss until wilted. Remove from heat.
  7. Finish: Stir in cold butter and sage until melted and sauce is glossy. Serve immediately.

Do not crowd the pan; cook sausage and chicken in batches if necessary to ensure browning. Use firm apples like Fuji or Honeycrisp to prevent mushiness. Swirling in cold butter at the end creates a rich emulsion. This recipe is naturally gluten-free if using certified GF sausage and broth.
