  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 0.5 cup full-fat sour cream
  • 0.5 cup beef broth (low-sodium)
  • 1 packet (1 oz) dried onion soup mix
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 0.25 cup heavy cream (optional)

Instructions

  1. Pat pork chops dry and season generously with salt and pepper.
  2. Optional: Sear chops in a hot skillet with butter for 2-3 minutes per side until golden brown.
  3. In the slow cooker, whisk together condensed mushroom soup, beef broth, sour cream, dried onion soup mix, dried thyme, and garlic powder until smooth.
  4. Place pork chops in the slow cooker, nestling them into the gravy.
  5. Pour any remaining skillet juices over the chops.
  6. Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours, until internal temperature reaches 145°F.
  7. Stir gravy well. If too thick, add splash of broth; if too thin, cook uncovered for 30 minutes to reduce.
  8. Serve chops with gravy over mashed potatoes, rice, or egg noodles.

Notes

Bone-in chops stay juicier but boneless work if not overcooked. Searing adds flavor but is optional. Use full-fat sour cream to prevent graininess. For a thicker gravy, use a cornstarch slurry in the last 30 minutes. Leftovers taste better the next day as flavors meld.
