- 4–6 bone-in or boneless pork chops (about 1-inch thick)
- 2 tablespoons butter (for searing)
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 1 can (10.5 oz) condensed cream of mushroom soup
- 0.5 cup full-fat sour cream
- 0.5 cup beef broth (low-sodium)
- 1 packet (1 oz) dried onion soup mix
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 0.25 cup heavy cream (optional)
Instructions
- Pat pork chops dry and season generously with salt and pepper.
- Optional: Sear chops in a hot skillet with butter for 2-3 minutes per side until golden brown.
- In the slow cooker, whisk together condensed mushroom soup, beef broth, sour cream, dried onion soup mix, dried thyme, and garlic powder until smooth.
- Place pork chops in the slow cooker, nestling them into the gravy.
- Pour any remaining skillet juices over the chops.
- Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours, until internal temperature reaches 145°F.
- Stir gravy well. If too thick, add splash of broth; if too thin, cook uncovered for 30 minutes to reduce.
- Serve chops with gravy over mashed potatoes, rice, or egg noodles.
Notes
Bone-in chops stay juicier but boneless work if not overcooked. Searing adds flavor but is optional. Use full-fat sour cream to prevent graininess. For a thicker gravy, use a cornstarch slurry in the last 30 minutes. Leftovers taste better the next day as flavors meld.
