  • 1 tablespoon vegetable oil or olive oil
  • Salt and black pepper to taste
  • 1 teaspoon paprika (smoked or regular)
  • 3 tablespoons real maple syrup
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey (optional)
  • 1 tablespoon fresh thyme or parsley, chopped
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a 13×9 inch sheet pan with parchment paper.
  2. Pat chicken breasts completely dry with paper towels. If breasts are uneven, pound them gently to about ½ inch thickness.
  3. Season both sides of the chicken generously with salt, pepper, and paprika.
  4. In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, apple cider vinegar, and honey (if using).
  5. Place chicken skin-side up on the prepared sheet pan. Drizzle with oil and rub over the skin.
  6. Bake for 15 minutes.
  7. Remove pan from oven. Brush a generous layer of the maple Dijon glaze over the top and sides of each chicken breast.
  8. Return to oven and bake for another 5-10 minutes, or until the glaze is sticky and slightly browned and internal temperature reaches 165°F (74°C).
  9. Remove from oven and let rest for 5 minutes.
  10. Sprinkle with fresh herbs and red pepper flakes before serving.

Notes

Patting the chicken dry is crucial for crispy skin. Do not skip the 5-minute resting period to ensure juicy meat. If your oven runs hot, check the chicken at 20 minutes and tent with foil if the glaze is browning too quickly. For extra crispiness, broil for the last 1-2 minutes.
