Instructions

  1. Thaw frozen shrimp under cold running water if necessary, then pat completely dry with paper towels. Season generously with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat. Sear shrimp in a single layer for 1-2 minutes per side until pink and opaque but not fully cooked. Remove to a plate, leaving the fond in the pan.
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Sauté for 1-2 minutes until fragrant, adding a splash of sun-dried tomato oil if needed.
