Ingredients

- 1 cup apple butter
- 1 ½ cups unsweetened vanilla almond milk
- 2 large eggs
- ½ cup light brown sugar

Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9 inch baking dish with butter or cooking spray.
- In a large bowl, whisk together eggs, almond milk, brown sugar, apple butter, vanilla extract, cinnamon, nutmeg, and salt until smooth and sugar is mostly dissolved.
- Add rolled oats to the wet mixture and stir well with a spatula to ensure every oat is coated. Fold in nuts or dried fruit if using.
- Pour the mixture into the prepared baking dish and smooth the top.
- Bake for 40-45 minutes, or until the top is golden brown and crispy and the center is set.
