  • 2 pounds boneless, skinless chicken thighs
  • 3 medium apples (Gala, Fuji, or Honeycrisp), cored and sliced into ½-inch wedges
  • 1 large yellow onion, sliced into wedges
  • 2 medium shallots, sliced (optional)
  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • ½ cup low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large 18×13 inch sheet pan with parchment paper or aluminum foil.
  2. Pat chicken thighs dry with paper towels. In a large bowl, toss chicken with 1 tablespoon olive oil, salt, pepper, garlic powder, and dried thyme until evenly coated.
  3. Toss apple wedges and onion wedges with remaining olive oil and a pinch of salt. Spread them in a single layer on the prepared sheet pan.
  4. Nestle the seasoned chicken thighs on top of the apples and onions, distributing them evenly.
  5. Roast in the preheated oven for 20-25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  6. While chicken roasts, whisk Dijon mustard and chicken broth in a small bowl.
  7. Remove pan from oven. Pour mustard-broth mixture over chicken and veggies. Scrape up browned bits from the bottom of the pan.
  8. Return pan to oven for 2 minutes to thicken the sauce. Optionally broil for 2-3 minutes for crispy skin.
  9. Garnish with fresh parsley and serve immediately with mashed potatoes, rice, or crusty bread.

Notes

Do not crowd the pan; use two pans if necessary to ensure proper browning instead of steaming. Use firm apples like Gala or Honeycrisp to prevent them from turning to mush. Chicken thighs are preferred over breasts for juiciness. Leftovers store well in the fridge for up to 4 days but do not freeze well as apples become mushy.
