  • 1 large firm apple (Honeycrisp or Fuji), diced (optional)

Instructions

  1. Pat pork chops dry and season generously with salt and pepper.
  2. Heat oil in a large skillet or Dutch oven over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown. Remove to a plate.
  3. Reduce heat to medium. Sauté diced onion for 2-3 minutes until soft. Add garlic, thyme, cinnamon, ginger, and red pepper flakes; cook for 1 minute until fragrant.
  4. Pour in apple cider and chicken broth, scraping up brown bits from the pan. Bring to a simmer.
  5. Return pork chops to the skillet, nestling them into the sauce. Cover and simmer on low-medium low heat for 20-25 minutes, flipping halfway, until internal temperature reaches 145°F.
  6. If using diced apples, add them during the last 10 minutes of braising.
  7. Remove chops to a clean plate and tent with foil. Increase heat to medium.
  8. Whisk cornstarch slurry into the simmering sauce and cook for 2-3 minutes until thickened.
  9. Stir in cold butter for a glossy finish. Serve chops with sauce poured over.
  10. Let meat rest for 5 minutes before serving.

Bone-in chops stay juicier; if using boneless, reduce braising time by 5-10 minutes. Do not skip the sear for flavor depth. Ensure a gentle simmer to keep pork tender. This dish does not freeze well.
