- 2 heads Romaine Lettuce, chopped
- 1 small Red Onion, finely diced
- 1 cup Cherry Tomatoes, halved
- 1 English Cucumber, diced
- 6 ounces Genoa Salami, sliced thin then chopped
- 6 ounces Provolone Cheese, cubed
- ½ cup Kalamata Olives, halved
- 3 tablespoons Mayonnaise
- 2 tablespoons Apple Cider Vinegar
- 1 teaspoon Dijon Mustard
- 2 tablespoons Olive Oil
- 1 clove Garlic, minced
- Salt and Black Pepper, to taste
- ½ cup Artichoke Hearts, chopped (optional)
- Red Pepper Flakes (optional)
- Fresh Parsley, chopped (optional)
Instructions
- Wash and dry the lettuce thoroughly using a salad spinner or paper towels. Chop into bite-sized pieces and place in a large mixing bowl.
- Dice the cucumber and halve the tomatoes. Finely dice the red onion. If using artichoke hearts, chop them. Add all vegetables to the bowl with the lettuce.
- Roll up salami slices and chop into small, bite-sized pieces. Cube the provolone cheese. Halve the olives. Add meat and cheese to the bowl.
- In a small bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, minced garlic, olive oil, salt, and pepper until smooth and emulsified.
- Pour the dressing over the salad ingredients.
- Use salad tongs to toss everything gently but thoroughly until all ingredients are coated.
- Serve immediately for best texture.

Chop all ingredients to uniform ½-inch pieces for consistent texture. Ensure lettuce is completely dry to prevent watery dressing. This salad is best eaten fresh; do not freeze.
