  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups (240g) powdered sugar, sifted
  • 34 tablespoons strong brewed coffee, cooled
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Thoroughly grease a 12-cup Bundt pan with baking spray containing flour, ensuring all crevices are coated.
  2. In a medium bowl, whisk together the flour, cocoa powder, espresso powder, baking soda, baking powder, and salt until no streaks remain. Set aside.
  3. In a large bowl, beat the room-temperature butter and granulated sugar on medium-high speed for 3-4 minutes until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Scrape down the sides of the bowl. Add vanilla extract.
  5. Reduce mixer speed to low. Add the dry ingredients in three additions, alternating with melted chocolate. Start and end with dry ingredients. Mix just until combined; do not overmix.
  6. Melt the chopped chocolate in the microwave in 30-second intervals, stirring between each. Let cool for 2 minutes, then gently fold into the batter.
