- 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized chunks
- 2 large heads fresh broccoli, cut into florets (about 4 cups)
- 2 cups sharp cheddar cheese, shredded
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup sour cream
- 1 cup Ritz crackers, crushed
- 2 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a 9×13 inch baking dish, combine chicken pieces, broccoli florets, cream of chicken soup, sour cream, garlic powder, and black pepper. Stir until evenly coated.
- Spread the shredded cheddar cheese evenly over the top of the mixture.
- In a small bowl, mix crushed crackers with melted butter until well coated.
- Sprinkle the buttered cracker crumbs evenly over the cheese.
- Bake for 20-25 minutes until cheese is bubbly and topping is golden brown.
- Let rest for 5 minutes before serving.
Notes
If using frozen broccoli, thaw completely and squeeze out excess water to prevent a watery casserole. Shred your own cheese for better melting. Let the casserole rest for 5 minutes after baking to allow the sauce to thicken.
