Chewy Peanut Butter Cookies: Best 5pm Sea Salt Treat

  • Author: Sarah
  • Total Time: 20 minutes
  • Yield: 24 cookies 1x

Description

These chewy peanut butter cookies with sea salt are a quick, weeknight-friendly dessert made with pantry staples. They feature crisp edges, soft centers, and a touch of flaky sea salt for a sophisticated flavor.

Ingredients

Scale
  • 1 cup (250g) creamy peanut butter (Jif or Skippy recommended)
  • ½ cup (115g) butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (110g) light brown sugar
  • 1 large egg, room temperature
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt (for dough)
  • Flaky sea salt (for topping)
  • Optional: ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  3. Add the egg and mix until combined. Add the peanut butter and mix until smooth.
  4. In a separate bowl, whisk together flour, baking soda, and ½ teaspoon salt.
  5. Add dry ingredients to the wet mixture and mix on low speed until just combined. Do not overmix.
  6. Scoop dough into 1.5 tablespoon balls. For best results, chill dough for 20 minutes (optional).
  7. Place cookies on baking sheets, leaving 2 inches between them.
  8. Bake for 10-12 minutes. Remove when edges are just starting to turn golden but centers still look soft.
  9. Immediately sprinkle flaky sea salt on top of the hot cookies.
  10. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Use creamy peanut butter for consistent texture. Ensure butter is softened but not melted. Do not overbake; cookies continue to cook on the hot pan. Chilling dough prevents spreading and enhances chewiness. Store in an airtight container for up to 5 days.
