  • 8 cups butternut squash (peeled and cubed, approx. 23 medium squash)
  • 1 medium yellow onion (chopped)
  • 4 cloves garlic (minced)
  • 4 cups vegetable broth (low-sodium)
  • 2 tablespoons unsalted butter
  • 1215 fresh sage leaves (chopped)
  • ½ cup heavy cream
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon cinnamon
  • 1 teaspoon salt (or to taste)
  • Black pepper (to taste)

Instructions

  1. Prep the squash: If using pre-cut squash, rinse and add to the slow cooker. If using whole, peel, remove seeds, cube into 1-inch pieces, and add to the pot.
  2. Add aromatics: Add chopped onion, minced garlic, chopped sage, nutmeg, cinnamon, salt, and pepper to the slow cooker.
  3. Pour in broth: Add vegetable broth over the ingredients. Stir gently to distribute spices.
  4. Cook: Cover and cook on LOW for 6-8 hours until squash is fork-tender.
  5. Blend: Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, blend in batches using a countertop blender.
  6. Add cream and butter: Stir in heavy cream and 2 tablespoons of butter until melted and combined.
  7. Season: Taste and adjust salt and pepper as needed.
  8. Serve: Ladle into bowls and top with extra cream, sage, or toasted pumpkin seeds if desired.

Notes

If you don’t have fresh sage, you can use 1 teaspoon of dried sage. For a deeper flavor, you can roast the squash cubes at 400°F for 20 minutes before adding to the slow cooker. If the soup is too thick, add more broth. If too thin, cook uncovered for the last hour. Leftovers taste better the next day.
