Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×9 inch square baking dish or 9-inch round pie plate.
  2. Wash peaches, cut them in half lengthwise, and remove the pits. Place peach halves cut-side up in the prepared baking dish.
  3. In a small bowl, combine brown sugar, ground cinnamon, and melted butter. Stir until it resembles wet sand. Mix in vanilla extract and lemon juice if using.
  4. Spoon the brown sugar mixture generously over each peach half, ensuring some gets into the center. Sprinkle chopped pecans over the top, pressing them slightly into the sugar.
