  • 1 tablespoon Butter
  • 46 slices Thick-Cut Bacon
  • 2 large Eggs
  • Salt and Pepper to taste
  • 2 slices Cheddar or American Cheese
  • Optional: ½ avocado, sliced
  • Optional: Sautéed mushrooms or spinach
  • Optional: Hot sauce

Instructions

  1. Prep ingredients: Slice avocado, shred cheese, and crack eggs into a bowl if desired.
  2. Cook bacon in a large skillet over medium heat for 4-5 minutes per side until crispy. Remove to a paper towel-lined plate.
  3. Leave about a tablespoon of bacon grease in the skillet. Spread butter on bread halves and toast butter-side down for 1-2 minutes until golden brown.
  4. Push toast to the side or remove to a plate. Crack eggs into the skillet and cook over medium-low heat until whites are set but yolks are jiggly (2-3 minutes). Season with salt and pepper.
  5. Place cheese on eggs, add a tablespoon of water to the pan, and cover with a lid for 30 seconds to melt the cheese.
  6. Assemble the sandwich: Bottom bread, cheese-covered egg, crispy bacon, top bread. Add optional toppings like avocado or hot sauce.
  7. Cut in half and serve immediately.

Notes

Toast the bread first to create a barrier against soggy bread. Use medium-low heat for eggs to keep yolks runny. If using turkey bacon, add butter to the pan as it renders less fat. Leftovers can be stored in the fridge for up to 2 days; reheat in oven or toaster oven to avoid soggy bread.
