  • 2 tablespoons blackening seasoning
  • 3 tablespoons butter, melted
  • 2 limes (1 juiced, 1 sliced)
  • 1 large ripe mango, diced
  • 1/4 cup red onion, finely diced
  • 1 small jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • 1 large avocado, sliced or diced

Instructions

  1. In a small bowl, combine diced mango, red onion, jalapeño, cilantro, and lime juice. Stir gently and set aside at room temperature.
  2. Pat fish fillets completely dry with paper towels. Season both sides generously with blackening seasoning, pressing spices in. Drizzle with melted butter and rub evenly to coat.
  3. Heat a cast iron skillet over medium-high heat until very hot (water drop should sizzle and evaporate instantly).
  4. Place fish fillets in the hot skillet. Do not overcrowd. Cook for 3-4 minutes on the first side until a dark crust forms.
  5. Flip fish carefully and cook for another 2-3 minutes until opaque and flaking easily. Internal temperature should reach 145°F. Remove and let rest for 1 minute.
  6. While fish rests, warm tortillas in a dry skillet for 30 seconds per side or microwave with a damp paper towel for 30 seconds.
  7. Flake the cooked fish into large chunks.
  8. Assemble tacos by placing fish on tortillas, topping with shredded cabbage, avocado, and mango salsa. Squeeze extra lime juice over the top and serve immediately.

Notes

Pat fish dry thoroughly to ensure a good crust. High heat is essential for blackening. Let fish rest before flaking to retain juices. Salsa can be made ahead. Do not freeze the fish or salsa as texture will suffer.
