  • 1 teaspoon cinnamon
  • 1 tablespoon melted butter
  • ¼ cup heavy cream
  • ¼ cup packed brown sugar
  • 2 tablespoons unsalted butter
  • ½ teaspoon cinnamon
  • Pinch of salt
  • Coarse sugar or sesame seeds (optional, for topping)
  • Vanilla ice cream or whipped cream (optional, for serving)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss sliced apples with lemon juice, granulated sugar, flour, and 1 teaspoon cinnamon until evenly coated.
  3. Roll out pie crusts on a floured surface into 12-inch circles and transfer to the prepared baking sheet.
  4. Pile the apple mixture in the center of each crust, leaving a 2-inch border.
  5. Fold the edges of the dough over the apples, pleating as you go, leaving the center exposed.
  6. Brush the exposed dough with melted butter (or egg wash) and sprinkle with coarse sugar if desired.
  7. Bake for 35-40 minutes until the crust is golden brown and apples are tender.
  8. While baking, make the drizzle: In a small saucepan over medium heat, whisk heavy cream, brown sugar, 2 tablespoons butter, ½ teaspoon cinnamon, and salt until thickened and smooth (3-4 minutes).
  9. Let the galette cool for 10 minutes to set the juices.
  10. Drizzle with warm cinnamon caramel and serve immediately.

Notes

Use a mix of sweet and tart apples for best texture. Do not skip the flour in the filling as it absorbs excess juice. If the crust edges brown too quickly, cover them with foil. The galette can be assembled and refrigerated for up to 24 hours before baking.
