- 6–7 medium apples (about 2.5 lbs / 1.1 kg), peeled, cored, and sliced
- 1/2 cup granulated sugar
- 1 tablespoon apple cider vinegar
- 2 teaspoons cinnamon
- 1/2 teaspoon ground ginger (optional)
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- 1 cup light brown sugar, packed
- 3/4 cup unsalted butter, cold and cubed
- 1/2 teaspoon salt
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- Peel, core, and slice apples into 1/4 inch thick slices. Toss with sugar, cinnamon, ginger, lemon juice, and cornstarch until coated.
- Spread the apple mixture evenly into the prepared baking dish.
- In a medium bowl, whisk together oats, flour, brown sugar, and salt.
- Add cold, cubed butter to the dry ingredients and work it in using fingers, a fork, or pastry cutter until the mixture resembles coarse crumbs with some pea-sized pieces.
- Sprinkle the topping evenly over the apples without pressing down.
- Bake for 45-50 minutes, or until the topping is golden brown and juices are bubbling around the edges. Cover edges with foil if browning too quickly.
- Let cool for at least 15 minutes before serving to allow juices to thicken.
Notes
Use cold butter for a flaky, crunchy topping. Avoid Red Delicious apples as they turn mushy. The topping can be made ahead and refrigerated. For gluten-free, use GF flour and certified GF oats. For dairy-free, use vegan butter.
